πŸ₯ Healthy Marshmallow Recipe (Naturally Sweetened + Dyed)

Ingredients:

  • 1 cup filtered water (divided)

  • 3 tbsp grass-fed gelatin

  • 1 cup pure maple syrup

  • 1 tsp vanilla extract

  • Natural food dye (e.g. beet powder, blue spirulina, turmeric, or use natural dye drops)

Instructions:

  1. In a stand mixer bowl, add Β½ cup water + gelatin β†’ let bloom for 5–10 mins.

  2. Meanwhile, in a small pot, combine maple syrup + remaining Β½ cup water.

  3. Bring syrup mixture to a gentle boil, then simmer until it reaches 240Β°F (soft ball stage)β€”use a candy thermometer if possible.

  4. Slowly pour hot syrup into gelatin mixture while whipping on low speed, then turn to high and beat for 8–10 minsuntil thick and fluffy.

  5. Add vanilla + natural food dye in the last 30 seconds.

  6. Pour into a lined/greased pan, spread evenly, and let set at room temp for 4–6 hours (or overnight). Or fridge 

  7. Slice into cubes and dust with arrowroot flour or coconut flour to prevent sticking.

πŸ₯ Easy Vegan Marshmallow Recipe (Maple-Sweetened + Dye-Free Optional)

Ingredients:

  • 1 cup aquafaba (liquid from unsalted chickpeas)

  • 1 cup pure maple syrup

  • 1Β½ tsp agar agar powder (NOT flakes)

  • Β½ cup water

  • 1 tsp vanilla extract

  • Optional: a pinch of cream of tartar (for fluffiness)

  • Natural food dye: beet powder, blue spirulina, or turmeric

Instructions:

  1. Prep agar syrup base:

    • In a saucepan, mix agar agar + Β½ cup water + maple syrup.

    • Bring to a boil, then simmer gently for 4–5 minutes, whisking often until slightly thickened.

  2. Whip aquafaba:

    • In a clean bowl, beat aquafaba + cream of tartar using a hand or stand mixer.

    • Whip for 8–10 minutes until stiff peaks form (like meringue).

  3. Combine:

    • While continuing to whip, slowly drizzle in the hot agar syrup. Beat for another 2–3 minutes.

    • Add vanilla and natural dye in the last 30 seconds.

  4. Set & Cut:

    • Pour into a lined tin and smooth the top.

    • Let it set at room temperature for 1–2 hours (don’t refrigerate or it gets weepy).

    • Cut into cubes and dust with arrowroot or coconut flour to prevent sticking.
