Easy Healthy Chocolate Fudge Brownie

The Best Brownie I have Ever MADE! And the best part is, its Gluten Free, Dairy Free, Organic and has No Refined Sugars (insert happy dance)

What You Need

200G Organic Coconut Oil (you can also do half nut butter or tahini for an extra healthy boost)

185G Organic Sugar Free Vegan Dark Chocolate Chips (or Cacao Buttons)

3 Organic Eggs (use flax or chia eggs for vegan)

1/2 Cup Organic Sorghum Flour (any plain gluten free flour should work)

1 Cup Crunchio (If you don’t have Crunchio you could sub with 1/4 Cup Organic Cacao + 1 Cup Organic Coconut Sugar, can sub sugar for maple or honey)

Good pinch of salt

Instructions

  • Preheat oven to 180Β°C

  • Line a square tin with baking/parchment paper

  • Place oil and chocolate chips in a saucepan, heat and stir until melted

  • Add dry ingredients, eggs and melted chocolate mixture into a sand mixer (or hand beater) and blend until combined.

  • Bake 28 minutes for fudgey but still very moist

  • Rest for 15 minutes before lifting out of the pan. Allow to cool for at least 20 minutes before cutting.

  • Enjoy! Can be frozen for school lunches

Note: Make this Brownie SUPER healthy by adding a couple table spoons of your favourite collagen, or protein powder!
